Martín Lippo is an internationally renowned Argentine chef and a pioneer in the world of molecular cuisine.
Specializing in experimental cuisine, he runs Vakuum in Barcelona, a state-of-the-art laboratory and a training facility focusing on avant-garde cooking.
Born in Buenos Aires, Martín Lippo grew up in the strict environment of the 70s, rebelling against a very conservative school system.
At 22, after initially trying out studies in psychology, anthropology and marketing, he finally turned to cooking, exploring a diversity of culinary traditions: French, Italian, Asian, Mexican, Caribbean and European.
In 1995, along with four of his friends, he started the Delfuego Traveling Chefs, a traveling culinary collective that operates like a rock band on tour, first in Argentina, Chile and Bolivia, then around the world.
He subsequently opened his own restaurants in Buenos Aires, focusing on local ingredients and testing new flavor combinations.
At only 27, he was named most creative young chef and best chef author in a new post-modern cuisine column in Argentina’s leading culinary magazine.
In 2000, Martín Lippo moved to Barcelona, where he began to push the boundaries of conventional culinary thinking.
Inspired by the molecular cuisine of Ferran Adrià and the classical principles of Auguste Escoffier, he is renowned for his work with liquid nitrogen.
Martín Lippo opened Vakuum, a culinary study center in Barcelona, which combines the functions of laboratory, training center, culinary venue and platform for thinking about cuisine from every angle: gastronomic creation, affordable catering and agribusiness manufacturing.
He has also produced a collection of over sixty videos for Les Vergers Boiron, showing how to combine techniques and flavors to create innovative and seductive dishes.
Martín Lippo is committed to the notion of “doing more with less”, teaching a culinary approach that emphasizes simplicity and innovation.
His main aim is to unleash culinary imagination, encouraging chefs to expand the boundaries of creativity.
