Ewald Knauf, a German master chocolatier born in 1955, is recognized all over the world for his expertise and craftsmanship in the art of chocolate making.

He has been teaching at Cologne’s Konditorenmeisterschule since 1991, training over a thousand chocolatiers and patissiers who are now considered leading figures in the field.
His brilliant career began at the Hilton Hotel in Düsseldorf, before he went on to win a number of prestigious competitions, including a gold medal at the Kochkunstausstellung in Frankfurt, a silver medal at the World Pastry Championship in Stuttgart in 1993, and a Special Prize at the World Pastry Cup in Lyon in 1996.

A member of the World Chocolate Masters jury for 10 years and of the JRE Pâtisserie Competition, Ewald Knauf champions precision as the cornerstone of creativity in chocolate making, an approach he has incorporated into his training courses.
