Jean-Marc Gaucher has been the Executive Pastry Chef at the Mira Hotel, Hong Kong’s luxury hotel and home to the prestigious COCO pastry café, since 2010.

Jean-Marc Gaucher began his career in his native France, opening his own bakery and pastry shop in Nice.
Jean-Marc Gaucher previously collaborated with internationally renowned pastry chef Didier Berlioz at La Panetière, a French gourmet restaurant in New York.
For the past ten years, he has traveled around the world in search of new ingredients and experiences, earning his reputation as an award-winning pastry chef at luxury hotels in Bangkok, Langkawi, Dubai and Macau.

Today, the COCO café-pâtisserie has grown into a showcase boutique, offering a jewelry-like collection of exquisite handmade cakes, pastries, chocolate “gems” and cupcakes, such as his Jardin Zen creation.
Jean-Marc Gaucher also organizes “Café Gourmand” day events, showcasing his creative fusion of French and Asian flavors, featuring rare cocoa from top-quality plantations in countries such as Bali and Vietnam, where his roots lie.
In May 2018, he organized a four-handed Afternoon Tea around matcha, in collaboration with renowned Japanese pastry chef Koji Fujita.
In every endeavor he undertakes, Jean-Marc aspires to transcend time and space to deliver magical moments to his customers.

He has developed his own style “by revisiting traditional French pastries”, as he puts it, “ with the idea of capturing the essence of the recipe and adding a touch of originality, to make the experience something new and yet familiar at the same time”.
In line with this spirit, his signature desserts are now all based on revisited French recipes, featuring matcha, and often Les vergers Boiron purées, such as mango, raspberry, yuzu and mandarin.
