For more than 15 years, Simone Caporale, internationally renowned mixologist and artisan of taste, marks the universe of cocktail with his creative and demanding vision. Owner of Sips in Barcelona, voted best bar in the world, it stands out for its sensory approach, sense of detail and ability to place taste at the heart of every creation.
Originally from Como, Simone discovers very early his passion for drinks and flavors. In London, he makes a name for himself at the Artesian Bar, where he develops a unique vision of the cocktail – sensory, immersive and human. In 2021, he co-founded Sips in Barcelona with Marc Alvarez. Since its opening, Sips has established itself as a global reference and features in the prestigious ranking of The World’s 50 Best Bars, elected Best Bar in the World in 2023, 3rd in 2025 and Best Bar in Europe in 2025. Simone also receives the same year, the World’s 50 Best Bars Industry Icon Award, in recognition of her influence and commitment to the bar universe.
Today, Simone Caporale is the owner of Sips in Barcelona, a cocktail bar renowned for its balanced, innovative and elegant creations. Among his projects, he defends an inclusive mixology, notably through the co-creation of ZEO, a concept without alcohol accessible to all and develops his own tools and techniques to push back the limits of the creation behind the bar. For more than 15 years, Simone has been integrating the frozen and ambient purées Les vergers Boiron at the heart of her creations, whose expertise, vision and values of creativity, requirement and authenticity deeply resonate with those of the brand. He naturally becomes a Global Brand Ambassador.
Simone Caporale’s signature is based on emotion and technique: for him, a cocktail is not simply an assembly of ingredients, but a complete sensory experience that solicits all the senses: sight, taste, touch, smell. He combines both classic and very modern methods (clarification, infusion, carbonization, cold extraction), develops his own tools and rethinks the bar’s gestures to enrich the creation. His avant-garde vision aims to create accessible drinks, rich in taste and aesthetics, while putting taste at the center of the experience.
