Ingrédients
Ginger frozen puree – 6cl
Banana peel syrup* – 3cl
Lime ambient puree – 1,,5cl
Soda water – 10cl
Add all the ingredients, except the soda water, into a cocktail shaker and add plenty of ice.
Shake hard for 15 seconds, and fi ne strain into an ice filled Old
Fashioned glass. Gently add the soda water and softly stir the drink to incorporate all the ingredients.
Garnish with a fresh mint bouquet.
Dice a fresh banana peel and weigh it; in a jar, add an equal weight of sugar to the peel.
Mix the two and let it sit overnight.
Blend with a blender and strain through a mesh filter or cheesecloth.
Keep in an airtight container in the fridge for one week.
One banana peel makes approximately 6 cl of syrup.
