Daniele Dalla Pola began his journey behind the bar at a very young age, working in his family’s café in Italy. Immersed in this vibrant scene, he discovered iconic bars and refined his signature style, strongly influenced by tropical and exotic mixology. Over time, he established himself as a leading figure in the world of exotic cocktails, combining: authentic tiki traditions, modern creative techniques and in-depth expertise in rum. Building on this experience, he went on to found Nu Lounge Bar in Bologna, a venue that perfectly reflects his universe — where immersive atmosphere, tropical inspiration, and high-end mixology come together.
Today, Daniele Dalla Pola works worldwide, no longer tied to a single venue. Instead, he brings his expertise to a variety of international projects across the global cocktail scene. He notably led the Esotico Miami project, a bar entirely dedicated to tiki culture and exotic cocktails, further establishing his reputation in tropical mixology. Over time, he has diversified his activity, working as a mixology consultant, concept creator, and international trainer. Through these roles, he collaborates with brands, hospitality groups, and industry professionals around the world. In addition, he frequently takes part in international events, cocktail festivals, and masterclasses focused on rum and mixology, sharing his expertise with both professionals and enthusiasts. As a result, he continues to play a key role in shaping and influencing the global cocktail industry, driven by creativity, innovation, and a passion for immersive experiences.
