Salmon Guru opened in Madrid in 2016 under the vision of Diego Cabrera, one of Spain’s most influential bartenders. The name Salmon Guru reflects this philosophy of going against the current: the salmon symbolizes independence and a refusal to follow convention, while “Guru” represents mastery of the craft.
