Founded in Barcelona in 2021 by Simone Caporale and Marc Álvarez, Sips quickly established itself as one of the world’s most influential cocktail bars thanks to its disruptive vision of mixology, placing taste and sensory perception at the center of the experience rather than theatrical presentation.
Sips opened its doors in Barcelona in June 2021. The project was born from the partnership between Simone Caporale, formerly of the renowned Artesian in London, and Marc Álvarez, former Beverage Director of Albert Adrià’s elBarri group. Their ambition was to reinvent the cocktail experience by stripping away anything unnecessary, allowing guests to focus entirely on the liquid itself, its textures, and its flavors.
